Tullum DOC Pecorino

The grapes used in producing Tullum doc Pecorino come from vineyards in hilly areas of Tollo indicated in cadastral map sheets 1 and 3 of Località San Pietro, sheet 5 of Località Macchie and sheet 11 of Località Colle di Tollo.

It is one of the historical vines from Abruzzo. Pecorino, a white wine that at first was appreciated for its rustic taste, then it was almost forgot, and now it is proving to be an excellent wine.

The exclusive personality of Pecorino in Tollo has been enhanced by the right choice of the clone, grafting and exposure of the vineyards.

The soil is medium textured, slightly calcareous, permeable, but dry at harvest time, east and south-east faced.
Both a favorable climate and advanced training system techniques make Pecorino reach a perfect ripening, that gives some excellent taste and bouquet qualities to this wine.

The vineyards are managed accurately in respect of the environment and of the biological rules for cultivation that require a limitation of the quantity produced on behalf of quality, so that the vegetal-productive equilibrium of the vineyards is also respected.

The winery uses the traditional technique of the local winemakers: vinification involving the maceration of the skins for a short period of time in the pre-fermentation phase followed by fermentation at a controlled temperature.

Pecorino is a wine with a great personality, perfectly structured in its taste.

An elegant white wine, long lasting and with delicate spicy hints.
