Tullum DOC Bianco

The grapes used in producing Tullum doc bianco come from vineyards in hilly areas of Tollo indicated in cadastral map sheets 1 and 3 of Località San Pietro, sheet 5 of Località Macchie and sheet 11 of Località Colle di Tollo.

It is a cuvee produced from autochthonous vines from Tollo, namely old clones of trebbiano, Passerina and Pecorino. Every vineyard selected for the production of Tullum Bianco is carefully chosen according to the clone, grafting, age, exposure to temperature differences but above all to the composition of the soil.

The soils vary from loose and tendentially sandy to fresh and deep and from those of a medium, slightly calcareous mixture, permeable and not very deep to those consisting of clay marl rich in minerals.

In the vineyards selected for the production of tullum Bianco, every management phase is performed with a mark of excellence.
The grapes are chosen when they are beginning to colour and in each phase the vegetal-productive equilibrium of the vineyards is respected.

The winery uses the traditional technique of the local winemakers: vinification involving the maceration of the skins for a short period of time in the pre-fermentation phase followed by fermentation at a controlled temperature.

Tullum Bianco is a wine with a complex bouquet, characterized by an unmistakable character.
