TULLUM DOC BIANCO SUPERIORE

he grapes used in producing Tullum doc Bianco Superiore come from vineyards in hilly areas of Tollo indicated in cadastral map sheets N°11 and N°12 of Località Colle Secco, sheet N°1 of Località Sterpari and sheet N°10 of Località Colle di Tollo.

It is a cuvée produced from autochthonous vines from Tollo, namely old clones of Trebbiano and Pecorino.
Every vineyard selected for the production of Tullum Doc Bianco Superiore is carefully chosen according to the clone, grafting, age, exposure to temperature excursions, but above all to the composition of the soil.

They vary according to the different vines, from loose and mainly sandy, fresh and deep soils to medium texture and slightly calcareous ones, not very deep, permeable and marl mixed rich with minerals. In the vineyards selected for the production of Tullum Doc Bianco Superiore, every management phase is performed with a mark of excellence.

The grapes are chosen when they are beginning to colour and in each phase the vegetal-productive equilibrium of the vineyards is respected.

In the winery the vinfication technique is made through the maceration of the skins for a short period of time in the pre-fermentation phase followed by fermentation at a controlled temperature in small oak barrels and steel tanks.

Tullum Doc Bianco Superiore is a long-lasting wine with a complex bouquet, characterized by an unmistakable personality.
